ROCAMBOLE
Subspecies ophioscorodon (
hardneck)
Known for 1-3 tight coiled stalks that eventually straighten as they
mature. Cloves are blunt at the tip and number 7-11 medium sized
with colors from tan to dark brown.
Spanish Roja...........................................$16/pound
Our original strain that has adapted extremely well
to a marine climate, (rainfall tolerant). True garlic flavor with
consistently large and uniform bulbs and medium sized cloves. Few
double bulbs. 95% of 2006 and 2007 crop ranged from 2-3 inches and
the largest weighed 1/4 pound plus. Average diameter was 2 1/4 to 2
1/2 inches with high density. Long keeping.
Excellent cooker and good overall.
Korean Red..............................................$16/pound
Asian origin, considered to be one of the hottest garlics around. Midseason harvest that stores well. Pull when leaves
just start to brown or it will split the bulb.(
may not be available this
year) Great for cooking.
Good all around kitchen usage.

From northern Idaho
and very hardy.
Carpathian

Matures late and stores well. Large sized
and comes from the Polish side of the Carpathian Mountain
Range. Very pungent, classic garlic flavor, tangy, spicy and hot.
PORCELAINS
Subspecies ophioscorodon
(hardneck) Porcelains have outstanding flavor and texture
characterized by large satiny white bulbs with tall pointed elegant
cloves. They are easy peeling and store until late spring. The bulbs
average 4 to 6 very large uniformly sized cloves and all are large
enough for planting with an average of about 40 cloves per pound.

Excellent flavor in a
large bulb with equally large cloves at 4-7 per head. Very hot with
smooth satiny wrappers that stores till late spring.
Great for cooking and roasting
Music.........................................................$16/pound
Very
hot raw, with a hearty and rich flavor when roasted. Pink
blush on white skinned large bulbs and cloves at 5-7 per bulb. Heavy
producer that adapts well.
STANDARD PURPLE STRIPE
Sub species ophioscorodon (hardneck) Named because of the
bright purple streaks and blotches. 8-12 tall crescent shaped
cloves per bulb. Long storage with 60 seeds/cloves to the pound. The leaves
grow at a wider angle to the stem than rocambole with a 270 degree
curl in the flower stalk.

Originally from Shevelis,
Georgia. Large bulb with 8-10 easy peel cloves is a top quality
cooking and baking variety.
A lingering flavor that is retained after cooking with a creamy
texture stores into Spring. late maturing.
Persian Star..............................................$16/pound
Native of Uzbekistan. Red tipped cloves with marbled streaks.
Quality flavor with a mild and spicy zing.
MARBLED PURPLE STRIPE
A Purple Stripe subvariaty (Hard neck) Bulb
wrappers are mottled. Cloves are easily counted while still wrapped.
Long storage with 50 cloves per pound.

Large bulb with 5-7
large cloves. Very high allicin and medium to strong flavor. Choice
roasting and cooking. Thrives in cold weather. Has a light pink skin
that turns redder in high iron soils.

many environmental factors the can affect our product in the field.

harvest.
